September 4, 1926 – January 11, 2024

It’s a day of joyous reunion for our mother Sylvia Chang (Chin Yun Lain) to be reunited with our father, Morris (Chang Tiam Choy). Sylvia peacefully passed away on Thursday January 11, 2024. Mother of Anne, Austin (Lyn), Mary, Monica, Margaret, Andrew (D), Annette (Larry) and Kennedy (D). She was a dear relative to Jean Hew (Lee Jai), Loi Go (Winston Chang) and Siong (Philip Chang). She was grandmother of Justin (Vanessa), Iba, Lisa (Kevin), Christopher, Aveclaire and great grandmother of Owen.

A birthright of China, a Sino-Japanese War survivor, a citizen of Trinidad & Tobago, an icon of Marabella and a grateful Canadian, our mother embodied a rich tapestry of cultures, resilience and unique identity, One of the first female Chinese entrepreneurs in Trinidad, she was a recognized chef, who introduced Hakka cuisine to the palate of a multicultural island.

Cherish the memories, embrace her generosity, kindness and compassion.

To those who celebrated her 95th Birthday in 2023, your presence was graciously appreciated. We were blessed with a Marian loving mother. Thank you God for her graces, virtues and gifts. Sylvia’s life was a blessing, Sylvia’s memory a treasure.

Hakka Braised Pork Belly is a traditional and classic Hakka dish. It is also a dish often served during Chinese New Year or any festive occasions. This braised pork belly dish is characterized as salty, fragrant and umami. The skill in this dish lies in the ability to cook the meat thoroughly without hardening it, and to naturally bring out the umami taste of the succulent pork belly. The braised sauce of this dish has a perfectly balanced sweet and savoury flavour. The end result is a very tender melt-in-the-mouth pork which is simply irresistible.
